- 6 freshly made Ravioli�
- 5 oz. fresh cheese (the best choice is mozzarella, burrata or ricotta)�
- 2 oz. freshly grated Reggiano Parmigiano cheese�(Parmesan cheese)�
- 1 egg yolk�
- 6 oz. fresh or frozen spinach (diced)�
- 1 teas. freshly grated garlic�
- 3 slices of Bresaola (a type of raw ham)��
- 2 tablespoons Olive oil�
- Hot Paula�s Pepper Jelly

Prepare fresh Ravioli. Make dough mixing one fresh egg for every 5 oz. of flour (it takes about 2 eggs and 10 oz. to make 6 Ravioli) . Roll out dough as thin as you can. Cut it in triangular shapes.��
Prepare stuff. Mix together fresh cheese, grated Parmesan cheese and egg yolk.�
Stuff each Ravioli with cheese mixture.
Brown Spinach and Garlic in 1 tablespoon Olive Oil in frying pan. Cover and keep warm in the pan.�
Fry Ravioli in 1 tablespoon Olive Oil frying pan.�
Set on a dinner plate:�
one spoonful of browned Spinach,�
a folded slice of Bresaola and�
2 fried Ravioli.�
Continue this layering method three times.�
Melt Paula's Pepper jelly in microwave for approx. 1 minute and pour on top of Ravioli.�
Put in the oven for a few minutes at 300 degrees. Serve warm. One serving. Enjoy!�
